Roasted Root Veggies

Ingredients:
3 beets
2 medium sized golden potatoes
5 carrots
1-2 yellow onions
Olive oil
Salt & pepper
Thyme

This is the easiest, most delicious side dish to make. First, Peel the beets, carrots and onion; then dice all the veggies into bite sized pieces. Place in a rectangular pyrex or large baking sheet and coat with olive oil, salt, pepper and thyme. Once all the veggies are coated place in the oven at 450 degrees Fahrenheit and roast until tender (about an hour). Partway through roasting the veggies, pull out the pan and stir the veggies around to make sure that all the pieces are being cooked evenly.

*We served these veggies alongside of a green salad, fresh bread and red wine.
